This cake is seriously yummy and healthy too! not only that, but its also gluten free and vegan too! i sliced it and topped it with my favourite crunchy nut butter and fresh berries. You can also top with a vegan chocolate spread, sliced bananas and toasted nuts. The creamy topping is made from whipped coconut and lime zest (very refreshing!) This is a beautiful light summery dessert which can be made well in advance and ideal for a dinner party. I used my Gooseberry & Elderflower curd as a base which can be found on this website, however you can always substitute it for lemon curd and top it with fresh raspberries for a lovely summery dessert.



Gooseberries are like fairies, you hear about them but rarely get to see them! the Gooseberry season is quiet short, but I was lucky to have a friend with a surplus of gooseberries this year. I have vivid memories of my mum making jars upon jars of gooseberry jam when we were kids but unfortunately it resembled wallpaper paste. Gooseberries have a very high pectin content and don't require the addition of lemon or jam sugar to make it set. the ratio of sugar to fruit is also less than other fruit jams. I think my memories of gooseberry jam has put me off making it, so therefore i opted to make something a little different and here it is- Gooseberry curd! I always find the foods that grow together, go together, therefore the addition of Elderflower to the Gooseberry curd is a perfect match! Enjoy! :-)



These sticky ribs have got to be the easiest tastiest ribs i have ever made. Be sure to get plenty of meat on these ribs which i purchased from Collerans' butcher in Galway City. This is the perfect dish to pop in the oven on low & slow while you pop out for a few hours, and what better dish to come home to. When i pop these in the oven, i also pop in some extra large baking potatoes which goes perfect with these yummy sticky ribs. Enjoy!

Why is it that these beauties are only eaten once a year! The aroma of fruit and spices filled my home and reminded me that i should make these more often. This recipe calls for plain flour as opposed to the traditional strong flour often associated with yeast products, but trust me you'll be glad you used plain flour just for the fluffiness and softness of these buns. All you need is a scant of butter and a cuppa tea. Enjoy!
